The taste of delicate sugar snap peas teamed with fresh lemon and mint is definitely a harbinger of spring. This quick and easy side dish goes great with a light fish dish, such as Baked Fish Fillets with Thyme-Dijon Topping or Salmon with Mango and Peach Salsa.

  • sugar snap peas
    8 oz
  • lemon (zested and juiced (about 1/2 tsp zest and 2 tbsp juice))
  • margarine
    1 tbsp
  • salt
    1/8 tsp
  • chopped fresh mint or cilantro
    1/4 cup


  1. In a medium saucepan, steam the peas, covered, for 5 minutes, or until just tender-crisp. Drain well. Transfer to a medium bowl.

  2. Gently stir the remaining ingredients into the peas while they are still warm.

  • Not recommended

    Too much margarine/butter and lemon juice. In my opinion, all the peas need is a little salt and pepper.
