  • fresh green beans (trimmed)
    8 oz
  • olive oil
    2 tsp
  • mushrooms, such as button, cremini, or portobello (sliced)
    4 oz
  • thinly sliced onion
    1/2 cup
  • garlic (minced)
    1 clove
  • salt
    1/8 tsp
  • lemon juice
    2 tsp
  • black pepper
    to taste

  1. Fill a medium saucepan three-fourths full with water. Bring to a boil, covered, over high heat. Cook the green beans, uncovered, for 5 minutes, or until tender-crisp. Drain well in a colander.

  2. Meanwhile, in a medium nonstick skillet, heat the oil over medium-high heat, swirling to coat the bottom. Cook the mushrooms, onion, garlic, and salt for 5 minutes, or until the mushrooms are soft and lightly browned, stirring frequently. Stir in the lemon juice, pepper, and cooked green beans.

    Try it in the oven... I made it with frozen fine green beans from Walmart... Mushrooms fresh white... Sweet onion... Carrots... Put on baking sheet with extra virgin olive oil with pepper and garlic fresh or minced... I had it with both and bake til ur likeness..

    I used this recipe and replaced the green beans( which I don't care for) with baby limas! Needless to say there weren't any left. Delicious!!!!

    I prepared this recipe using the french string beans (no string removal), the regular white mushroom, sweet onions and only 1 table spoon of lemon juice. Everybody liked and fast to prepare too.
