Directions
-
Preheat your oven to 375 degrees F (190 degrees C).
-
Grease a 9x13 baking dish with cooking spray or butter. Arrange a layer of sliced zucchinis at the bottom of the dish, slightly overlapping. Sprinkle a portion of the sliced onions over the zucchinis. Sprinkle a bit of the grated cheese over the onions. Repeat the layers until all zucchinis, onions, and half of the cheese are used.
-
Sprinkle the cooked chicken evenly over the layered zucchinis and cheese.
-
In a small saucepan, melt the butter over medium heat. Stir in the heavy cream, dried coriander, salt, and pepper. Heat the mixture until it's warmed through.
-
Pour the cream mixture evenly over the layered zucchinis, onions, cheese, and chicken. Sprinkle the remaining cheese on top.
-
Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
-
Remove the foil and continue baking for an additional 15–20 minutes, or until the zucchinis are tender, the chicken is heated through, and the cheese is melted and golden. Let the casserole rest for a few minutes before serving.

I found this very tasty. The only problem I had with it was the fact that the instructions were out of sequence. It should have been 4, 5, 3, 6, 2, 1 (remove foil), 7 and then the rest of 1.

This recipe sounds good and I want to try it, HOWEVER the Directions are out of order. It doesn't mention including the chicken in the layers. Please correct!! Fortunately, I can figure it out.

the flavor was good, but the recipe is a mess. The directions are not in order and you have to jump around trying to figure out the steps.

I haven't tried this yet because the directions are a bit confusing. I believe they are out of order. The 1st step says to uncover something with foil. Please correct this because I'd really like to try this.
