Directions

In a big bowl, add fresh spinach. Drizzle dressing mixture onto spinach and toss. Sprinkle with toasted almonds and serve!

In a saucepan, add all ingredients for dressing. Stir together and cook until warm and sweetener is dissolved. Remove from heat. Stir in sliced red onion and cranberries. Let cool slightly.

Dressing was really light and I added grilled chicken. Really good salad that reminds me of a salad I've ate in a bistro. Very simple recipe that packs in all the flavor. Not too sweet, it was just right.
