  • light mayonnaise
    1/2 cup
  • lemon (juiced)
  • honey
    1 tsp
  • Poppy Seeds
    1 tsp
  • cooked chicken (shredded)
    2 cup
  • Fresh Strawberries (diced)
    1 cup
  • celery (chopped)
    2 stalks
  • green onion (scallion) (chopped)
    2 stalks
  • whole wheat sandwich thins


  1. Mix mayonnaise, lemon juice, honey, and poppy seeds together in a medium bowl.

  2. Add chicken, strawberries, celery, green onions. Toss to combine.

  3. Season with salt and pepper, if desired.

    My husband was surprised by how much he enjoyed eating this because at first he was slightly hesitant to eat chicken with strawberries together but he said that this was actually pretty good. The lemon juice somewhat brought the sweetness down from the strawberry, the only thing I didn't have was Poppyseed.
