How to Make Chicken Joes

OK, so time for a confession. While we always had home-cooked meals, we also always had a can of Sloppy Joe mix tucked into the corner of the pantry for when we got lazy. Knowing now that processed foods are not healthy, I developed these Chicken Joes that are much more diabetes-friendly with all the same taste of the sloppy Joes of childhood. With extra vegetables, this version makes the grade.

To lower the amount of carbs use half a bun to make an open-faced sandwich.

Step-By-Step Instructions:

  1. In a large skillet, cook the ground chicken, onion, garlic, chili powder, paprika, and pepper over medium heat until meat is browned, about 5–6 minutes.

  2. Add in the green or red pepper and zucchini and cook over low heat for about 5 minutes, until vegetables are tender. Add the diced tomatoes and BBQ sauce and simmer for 10 minutes.

  3. Serve the mixture on a toasted bun.

Chicken Joes

After just being diagnosed with diabetes, I've been looking for diabetic recipes. Made these for the first time tonight, followed recipe exactly, and they were delicious! Served with a green side salad. We'll definitely be eating these again!

Pretty good

I wanted to try something with ground chicken and this turned out pretty good! However, I did make some adjustments. I’m not a big fan of barbecue sauce so I heavily seasoned it with paprika and chili powder. I also used a fresh tomato, diced, and cooked half with the chicken and used the other half to make some guacamole, which was topped on top of the meat. Everything else was pretty much the same. Super easy to make!

This is ok, but veggies not cooked through.

Definitely recommend sauté all vegetables before browning chicken, and set aside,
Then add when adding bbq and diced tomatoes

I made this recipe with ground Turkey, it was pretty good. I used G Hughes' Smokehouse Sugar-Free BBQ Sauce - Sweet & Spicy. I omitted the paprika salt just because I didn't have any. Overall good weeknight meal.
