Directions

Preheat a large non-stick skillet over medium heat. Add 1 tablespoon of butter, apples, and 1/2 tsp cinnamon. Cook, stirring often, until apples soften, 5–7 minutes. Transfer apples to a small bowl and cover with foil to keep warm. Wipe out the skillet with a paper towel and reserve for later.

In a medium bowl, whisk together the egg substitute, ½ tsp cinnamon, nutmeg, and sugar.

Return the skillet to medium heat. Add the rest of the butter and swirl to coat the bottom.

Dip the cloud bread rounds into the egg mixture, turning to coat both sides. Place in the skillet and cook for 2-3 minutes per side, until the rounds begin to brown.

Divide rounds between plates. Top with apples, walnuts, maple syrup, and a light dusting of powdered sugar, if desired.
