packaged coleslaw mix
- 1 (16-oz) bag
- 1 (16-oz) bag

lower sodium soy sauce
- 2 tbsp
- 2 tbsp

ground ginger

green onions (sliced)

Directions

Season pork with 1/4 teaspoon pepper and the garlic powder. Sauté pork in a large skillet over medium-high heat until completely cooked. Drain fat if needed. Remove pork from pan and set aside.

Heat olive oil in pan and add garlic; sauté 30 seconds. Add coleslaw, soy sauce, ginger, and 1/4 teaspoon pepper. Cook 6 minutes, stirring frequently. Add pork back to pan and top with green onions; heat 1–2 minutes.

Serve over brown rice or cauliflower rice if desired.

I made this for the first time and really liked it. It’s a nice change of pace from what we normally have and my wife even had 2 helpings, something she normally doesn’t do.I’d like to change it up and maybe try diced or ground chicken.

Very yummy, I added a little of G. Hughes Sweet Chili sauce on it for a little bit of a sweet kick!!

My favorite food is Chinese food. When I was diagnosed with congestive heart failure and a diabetic my whole world of eating had to change, including no more Chinese food (too much sodium). When I found this recipe, I was so happy and to top it off all the ingredients were on sale at my local market for that week. I decided to give it a try. So glad I did, my husband and I both like it. We liked it so much we had it again the following week when our son was home and he loved it too. This is defiantly a keeper.
