  • part-skim mozzarella cheese (shredded)

  • green onion (finely chopped)
    1/2 cup
  • tomatoes (diced)
    1 cup
  • fresh basil or flat leaf parsley (chopped)
    1/4 cup

Directions

  1. Heat the oil in a large nonstick skillet over medium heat. Add the sausage and cook 3 minutes or until beginning to brown, stirring occasionally. Pour the egg substitute evenly over the sausage and cook 1 minute. Do not stir. Then, gently lift to allow uncooked egg to flow under. Remove from heat.

  2. Sprinkle the cheese, green onions, tomatoes, and basil evenly over all.

    The instructions don't mention that it takes a while to have the eggs cook in the pan. I just says cook for 1 minute. If I make this again I will stir until the eggs are mostly cooked, other wise the bottom of the frittata burns.
