Directions

  1. In a small bowl, whisk together the vinegar, salt, pepper, olive oil, and mint.

  2. In a large bowl, combine the watermelon, onion, radishes, and feta cheese. Add dressing and stir gently to combine. Serve on a bed of baby arugula.
