  • black pepper

  • olive oil
    1/4 cup
  • fresh mint (leaves torn)
    2 tbsp
  • seedless watermelon (diced, about 3 ½–4 cups)
    1 small
  • Vidalia onion (thinly sliced)
    1/2 small
  • radish (cut away stems and thinly sliced)
    1 bunch
  • feta cheese (crumbled)
    2 oz
  • baby arugula
    5 oz


  1. In a small bowl, whisk together the vinegar, salt, pepper, olive oil, and mint.

  2. In a large bowl, combine the watermelon, onion, radishes, and feta cheese. Add dressing and stir gently to combine. Serve on a bed of baby arugula.
