  • chickpea (garbanzo) beans (16-ounce, rinsed and drained)
    1 can
  • light mayonnaise
    2 tbsp
  • lemon (juiced)
  • red pepper (diced)
    1/4 cup
  • celery (diced)
    1/4 cup
  • Pinch ground black pepper
  • cayenne pepper (if you prefer less spicy, use paprika)
    1 pinch
  • cucumber(s) (peeled and sliced into rounds)


  1. In a small bowl, coarsely mash chickpeas with a potato masher, leaving some beans whole.

  2. Add remaining ingredients except for cucumber and mix well.

  3. Spoon about 1 Tbsp. chickpea dip on each cucumber round
