Peanut Butter Banana Oat Bites

These satisfying high-fiber bites make a great snack or quick breakfast. You can freeze a couple bites in a snack-size plastic bag for a grab and go breakfast too!

peanut butter (heated in microwave for 30 seconds)
- 1/2 cup
- 1/2 cup

vanilla extract
- 1 tsp
- 1 tsp

Splenda Brown Sugar blend
- 2 tbsp
- 2 tbsp

old-fashioned rolled oats (not quick cooking) (gluten-free if needed)
- 2 cup
- 2 cup

baking soda
- 1 tsp
- 1 tsp

salt
- 1/2 tsp
- 1/2 tsp

ground flax seed
- 1/4 cup
- 1/4 cup

Directions

Preheat oven to 350 degrees. Line a baking sheet with parchment paper.

In a medium bowl whisk together peanut butter, banana, egg, vanilla and Splenda Brown Sugar blend.

In a small bowl mix together oats, baking soda and salt. Add milled flaxseed.

Add oat mixture to peanut butter mixture and mix well.

Scoop batter into 1 Tbsp. balls and place on baking sheet. Bake for 10-12 minutes. Cool on wire rack.

Is the servings correct? 48 bites or 12 servings of two bites? I think I only got 20 bites in my first batch.

I added just a few diced dried cherries I had on hand, not too many because of not wanting to increase the sugar content of the recipe too drastically. I agree with others that adding a few mini choc chips or chopped walnuts would be a good idea. Overall, a good diabetic snack. I would definitely make again.

I have not made these yet but my question is how can I substitute the Splenda. I don't use artificial sweetners because they give me migraines! Can I just sub applesauce and if so, how much?

I stumbled onto this recipe a couple years ago. It has been a favorite snack since the first time I made them. Like other reviewers I like them a lot. I often have more than two or three and they do not spike my glucose. For variety, I sometimes add sugar free chocolate chips and/or chopped walnuts. I have to hide them from my kids because they like them as well.

These were great. I used 2 bananas, 1 frozen one may have been enough, more to come next time on that.Plenty moist for me. I used almond four since I didn't have the flax. Added 1/8 cup mini chocolate chips. Yumm. I will definitely use this recipe again.
