  • aceite de oliva
    1 cda.
  • cebolla (finamente picada)

  • pimiento rojo (finamente picado)

  • zapallo o calabaza invierno (butternut) en cubos
    1 taza (aprox. 7 oz)
  • habichuelas coloradas (enjuagadas y escurridos)
    1 lata (de 15.5 oz)
  • caldo de pollo o vegetal sin sal
    1 1/2 tazas
  • salsa de tomate sin sal agregada
    1/4 taza
  • sal
    1/4 cdta.
  • pimienta
    1/4 cdta.
  • cilantro picado
    1/4 taza

Directions

  1. Calentar el aceite en una sartén antiadherente grande a fuego medio alto. Agregar la cebolla, el pimiento rojo y el ajo, y saltear, revolviendo de vez en cuando, hasta que los vegetales estén blandos, aproximadamente 8 minutos.

  2. Agregar el zapallo, las habichuelas, el caldo, la salsa de tomate, la sal, la pimienta y hervir. Bajar el fuego a medio. Tapar y cocer hasta que el zapallo esté blando, 10–12 minutos. Echar el cilantro y revolver.
