Instead of s'mores, satisfy your sweet tooth with this simple graham craker sandwich! Add some fun to your sandwiches by pressing rainbow sprinkles or mini dark chocolate chips along an outer edge. A teaspoon of sprinkles has about 3 grams of carb and an ounce of mini chocolate chips has 9 grams of carb.

  • sugar-free instant chocolate pudding mix
    1 (1.4 oz) packet
  • peanut butter powder
    1/4 cup
  • skim milk
    2 cups
  • graham cracker squares (14 rectangles, each 5 inches long)

Directions

Directions

  1. In a small bowl, whisk together the pudding mix, peanut butter powder, and milk. Refrigerate for 5 minutes.

  2. For each sandwich, place 2 Tbsp of the pudding mixture onto a graham cracker square. Top with another graham cracker. Repeat for the remaining 13 sandwiches.

  3. Place the sandwiches on a baking sheet and freeze for 1 to 2 hours.
