Directions

  1. Preheat oven to 375 degrees F. Coat a baking dish with cooking spray.

  2. Remove the skin from the chicken and arrange in a single layer in the baking pan.

  3. In a small bowl, whisk together the cilantro, lime zest, lime juice, honey, garlic, ground black pepper and salt. Pour the mixture evenly over the chicken and bake for 45-50 minutes or until the internal temperature of the largest piece of chicken is 165 degrees.

    Easy and tasty. After I marinated the chicken, I added carrots to the leftover marinade and a little more garlic and salt and pepper. Cooked the carrots on the same pan at the same temp and for the same time. The entire meal was seriously delicious. After the chicken is done cooking, make sure to put some of the sauce from the pan back on top for extra flavor. I’ll be making this again!

    Very easy recipe to pull together. Made with skinless thighs instead of a whole chicken. Only wishing there was more of a lime flavor. Next time will add more lime. I will make this again.
