Budget-Friendly Cilantro Lime Roasted Chicken

Cilantro and lime make a fresh and zesty flavor combination in this chicken dish. We start with a whole chicken and break it down into 2 breasts, 2 thighs, two drumsticks, and 2 wings. Directions

Preheat oven to 375 degrees F. Coat a baking dish with cooking spray.

Remove the skin from the chicken and arrange in a single layer in the baking pan.

In a small bowl, whisk together the cilantro, lime zest, lime juice, honey, garlic, ground black pepper and salt. Pour the mixture evenly over the chicken and bake for 45-50 minutes or until the internal temperature of the largest piece of chicken is 165 degrees.

I used boneless, skinless chicken breasts and marinated them in the sauce for an hour. It is very tasty. I will use the left over chicken for chicken tacos.

Very easy recipe to pull together. Made with skinless thighs instead of a whole chicken. Only wishing there was more of a lime flavor. Next time will add more lime. I will make this again.
