  • boneless, skinless chicken breasts (diced)

  • green bell pepper (diced)

  • navy or great northern beans (rinsed and drained)

  • black pepper

Directions

  1. Spray a large soup pot with cooking spray. Add chicken and sauté over medium heat for 7 minutes or until done. Remove from pan.

  2. Add onions and green peppers and sauté over medium-high heat for 3 minutes or onions until clear. Add garlic and sauté 30 more seconds.

  3. Add remaining ingredients along with cooked chicken and bring to a boil. Reduce heat and simmer for 15 minutes

  4. Meal Cost: $7.50

    This chili turned out great but it is a bit thick. In the future, I probably would not drain the beans. I know that will increase the sodium level in the overall recipe but I like a thinner chili. Other than that, the chili is very satisfying and flavorful. I will definitely make this again.
