Braised Brown Rice Meatballs

Preheat oven to 350F.

Add all ingredients except the vegetable juice to a bowl, and mix until well combined. Form mixture into 8 meatballs.

Place meatballs in a small baking dish, add the vegetable juice, and bake for 30 minutes.

Serve with a green salad dressed with a little olive oil and lemon juice, if desired.
