  • vegetable juice (low-sodium)

Directions

Directions

  1. Preheat oven to 350F.

  2. Add all ingredients except the vegetable juice to a bowl, and mix until well combined. Form mixture into 8 meatballs.

  3. Place meatballs in a small baking dish, add the vegetable juice, and bake for 30 minutes.

  4. Serve with a green salad dressed with a little olive oil and lemon juice, if desired.

    I didn't have vegetable juice, so substituted a can of diced tomatoes in tomato juice. I loved it! Very flavorable, although I would probably add cayenne pepper the next time. Served it with fresh green beans and a lettuce salad. Great meal!
